Ingredients:
100g chana dal (split chickpeas)
1 onion (finely chopped)
1 tomato (finely chopped)
2 green chilies (slit)
2–3 garlic cloves (chopped)
2 dried red chilies
Fresh green coriander (dhania),
chopped for garnish
1 tsp cumin seeds (jeera)
1 black cardamom (badi elaichi)
2 cloves (long)
Dry masalas (to taste):
turmeric,
red chili powder,
cumin powder,
coriander powder,
and salt
1 tbsp oil or ghee for tempering
Instructions:
Prepare the Chana Dal: Rinse the chana dal thoroughly and soak it in water. Pressure cook the dal with 2 cups of water, a pinch of turmeric, and salt. Cook for 3–4 whistles or until the dal is soft but not mushy.
Set aside. Make the Tempering (Tadka): Heat oil or ghee in a pan. Add cumin seeds (jeera), black cardamom (badi elaichi), and cloves (long). Let them splutter. Add chopped garlic, dried red chilies, and green chilies. Sauté until the garlic turns golden brown.
Add Vegetables and Spices: Add finely chopped onions and sauté until they turn soft and translucent. Add chopped tomatoes and cook until they become soft and the oil starts to release from the masala.
Sprinkle the dry masalas: red chili powder, cumin powder, coriander powder, and a pinch of turmeric. Mix well. Combine Dal and Tadka: Pour the cooked dal into the pan with the tempering. Stir everything together and let it simmer for 5–7 minutes, allowing the flavors to blend.
