Ingredients:
- 300g chicken (cut into pieces)
- 4-5 small onions (finely chopped)
- 2 tomatoes (chopped)
- 2 green chilies (slit)
- A bunch of fresh coriander (chopped)
- 2 teaspoons ginger-garlic paste
Dry Spices:
- ½ teaspoon turmeric powder
- 2 teaspoons coriander powder
- 2 teaspoons red chili powder
- 1 teaspoon Kashmiri red chili powder
- Salt (to taste)
- Chicken masala (to taste)
- Garam masala (to taste)
- 2 bay leaves
- 1 large cardamom
- 2 small cardamoms
- A small piece of cinnamon
- 2 cloves
- A pinch of black pepper
- 2 teaspoons mustard oil
Instructions:
- Heat the Oil: In a pan, heat the mustard oil on medium heat until it’s hot.
- Sauté the Onions: Add the chopped onions and sauté until they turn golden brown.
- Add Ginger-Garlic Paste: Mix in the ginger-garlic paste and cook for a couple of minutes until the raw smell disappears.
- Incorporate the Tomatoes: Add the chopped tomatoes and cook until they soften and the oil begins to separate.
- Spice It Up: Add the turmeric powder, coriander powder, red chili powder, Kashmiri red chili powder, and salt. Mix well and cook for a few minutes.
- Add Chicken: Add the chicken pieces to the pan. Stir well to coat the chicken with the spice mixture. Cook for about 5-7 minutes, stirring occasionally.
- Add Green Chilies and Whole Spices: Toss in the slit green chilies, bay leaves, large and small cardamoms, cinnamon, cloves, and black pepper. Mix well.
- Simmer: Cover the pan and let it cook on low heat for about 15-20 minutes, or until the chicken is fully cooked and tender. Stir occasionally to prevent sticking.
- Final Touches: Once the chicken is cooked, sprinkle chicken masala and garam masala over the dish. Stir in the chopped coriander and cook for an additional 2-3 minutes.
- Serve: Remove from heat and serve hot with rice or naan.
